This is a single hop barrel-fermented dry-hopped sour featuring Mosaic hops. Dry, oaky, stone fruits, citrus, a hoppy edge, and restrained acidity. We aged it for you, drink it fresh.

GRODZISKIE $12 BOTTLE ON TAP

3.8% ABV | 30 IBU | 8.8 GRAVITY

Low in alcohol and fairly smoky, our Grodziskie was dry-hopped and barrel fermented with a blend of yeast and bacteria, resulting in a moderate acidity and "farm-y" character.

5% ABV | 20 IBU | 10.7 GRAVITY

Third in the Bricoleur series, this beer is an 80% stainless fermented, 20% barrel fermented blended sour beer. Brewed with malted wheat, hopped with Centennial and Meridian.

Smoked beer is an acquired taste. So is sour/funky beer. We've acquired those tastes, and as a result we present to you this barrel-fermented, 100% oak- and beechwood smoked sour wheat.

SCHWARZBIER ON TAP

A nod to the traditional German-style black lager, intensively step-mashed for malt body, not sweetness, assertively hopped for a grassy, spicy aroma. Complicated without being obtrusive.

VIENNA LAGER ON TAP

Our interpretation of the classic Vienna lager - pale amber in color, medium bodied, ever so slightly toasty from Munich and Vienna malts, complimented by a grassy noble hop nose.

A German-style pilsner, dry and crisp with a grassy hop aroma from a large kettle addition of Hallertau Mittelfrüh. One hop, one malt, lager yeast. Simple and delicious.

Brewed exclusively with El Dorado hops, this dry-hopped IPA is fermented with a combination of Saccharomyces Trois and Brettanomyces. Fruity, funky, and hoppy.

STUPID SEXY FLANDERS! ON TAP

Hi-diddley-ho, beer drinkerinos! This is a mixed culture sour red fermented with lactobacillus and Brettanomyces. Toasty dark malts, acidity, funk, and an irritatingly positive disposition.

A dry, rustic, hop-forward farmhouse ale brewed with a high percentage of malted wheat, Centennial hops, and French Saison yeast.

SAISON DREI ON TAP

Saison Drei is a pale, dry, rustic, and funky farmhouse ale fermented with a classic temperamental yeast strain and Brettanomyces. Brewed with local Mt. Hood hops. Naturally conditioned.

Dry, pale, and aroma-forward American IPA brewed with wheat malt and Horizon, Chinook, Crystal, Cascade, Simcoe, and x331 experimental hops.

ROSELLE ON TAP

Roselle is soured with our house lactobacillus strain and infused with hibiscus flowers, which lends the beer floral and citrus aromas and flavors and its red hue. Tart, fruity, and floral.

FLYOVER COUNTRY ON TAP

The things that inspire us are closer at hand than we might think: corn, domestic six and two row barley malts, lager yeast, barrels fashioned of MN oak, Cascade hops of local origin, a bevy of microbes.


Past Beer

WINKELMAN

8.4% ABV, 95 IBU, 18.3 GRAVITY

Named for an IPA-happy guy we know, this is our first double IPA. Extra pale, dry, brewed exclusively with continental pilsner malt, and Horizon, Chinook, Centennial, and Falconer's Flight hops.

TRI-FERM

4.8% ABV, 25 IBU, 10.5 GRAVITY

TRI-FERM brings the tri-forces of hefeweizen yeast, lactobacillus, and Brettanomyces together. Some beers are triple hops brewed; this one is triple fermented. Tart with a noticeable Brett funk.

S.M.A.S.H: SIMCOE

5% ABV, 40 IBU, 11.2 GRAVITY

The second in our S.M.a.S.H. "Single malt and single hop" Pale Ale series! This one features Simcoe hops and Vienna malt.

FRONTENAC

5.3% ABV, 21 IBU, 11.35 GRAVITY

Barrel-fermented sour beer collaboration with Fulton Beer and Oakhold. Aged in Frontenac and Marquette wine barrels from Parley Lake Winery, brewed with malts from Malterie Frontenac in Quebec.

GIANTSBANE

8.6% ABV, 50 IBU, 19.75 GRAVITY

Giantsbane is a Double Stout brewed with dark and roasted malts. Black, roasty, and hefty, we kettle sour a portion of the wort prior to the boil to provide the classic stout "twang."

U-PICK BOTTLE

5.5% ABV, 23 IBU, 11.4 GRAVITY

We recruited co-op owners, workers, and friends to go berry pickin' in August and this beer is the result. We added the berries to barrel-fermented sour beer, and allowed it to re-ferment

S.M.A.S.H: CHINOOK

5% ABV, 40 IBU, 11.2 GRAVITY

The first in our S.M.a.S.H. "Single malt and single hop" Pale Ale series! This one features Chinook hops and Vienna malt.

CITRA JR.

4.5% ABV, 22 IBU, 9.8 GRAVITY

You may remember Citra Sour. This beer was fermented in the same barrels, and it came out tasting pretty cool, so we dry-hopped it with more Citra. A mixed culture hoppy session beer.

IPA: X331 EXPERIMENTAL

6% ABV, 60 IBU, 13.9 GRAVITY

IPA brewed with a new experimental hop variety from Indie Hops/Oregon State. Described by them as “fresh tropical citrus, with a hint of wafting joint smoke from around the block."

KELLER BLANC

5.5% ABV, 30 IBU, 12.5 GRAVITY

The first in our series of member homebrew contest winners, Keller Blanc is a pale lager generously hopped with Hallertau Blanc. Recipe and brewing assist by FSBC owner Kyle Schmidt!

HEFEWEIZEN CANS

5% ABV, 12 IBU, 12.2 GRAVITY

A traditional Bavarian-style wheat beer. Pale, spritzy, with plenty of banana, clove, and vanilla notes - all from the yeast! No bananas were harmed in the brewing of this beer.

FSB: 2016

9.8% ABV, 70 IBU, 18.1 GRAVITY

We fermented the 2016 FSB with French Saison yeast and aged it in 45th Parallel bourbon and rye whiskey barrels. Oak, vanilla, booze, chocolate, with a surprisingly dry finish.

IT'S GOLD, JERRY!

4.8% ABV, 30 IBU, 11.7 GRAVITY

It's Gold, Jerry! is back - our fresh hop pale ale with local Cascades grown by Mighty Axe. We use 100lbs. of freshly-picked hops in each batch to lend the beer a grassy, citrusy character.

RAZZ ROSELLE BOTTLE

5.7% ABV, 10 IBU, 12 GRAVITY

It's our hibiscus sour saison, with approximately one buttload (ok, not quite) of raspberries added. It's quite delicious.

FSB: 2015

11% ABV, 60 IBU, 20.8 GRAVITY

We fermented the 2015 FSB with French saison yeast and aged it in 45th Parallel rye and wheat whiskey barrels. Oak, vanilla, booze, chocolate, with a surprisingly dry finish.

SMASH: EUREKA!

5.1% ABV, 45 IBU, 11.5 GRAVITY

The 3rd SMaSH beer in the series, this dry-hopped pale ale was brewed exclusively with Vienna malt, and hopped with Eureka hops. Dry, bready, dank and spicy with notes of citrus fruit.

IPA: SAUVIN

6.5% ABV, 60 IBU, 13.8 GRAVITY

Extra dry IPA brewed with Amarillo and Nelson Sauvin hops, and dry-hopped with Nelson Sauvin and Simcoe. Herbal, tropical, pine, a hint of the Mary Jane.

LÄCTOBÄC: ONE

5.9% ABV, 15 IBU, 12.1 GRAVITY

The first in our LÄCTOBÄC series, ONE is a pale wheat Saison soured in the kettle with our house lacto strain. Pale, dry, and tart, this is about as clean as sour beers get.

SMöRGåSBORD BOTTLE

8.3% ABV, 36 IBU, 15.7 GRAVITY

A winter-friendly blend of four beers from our barrel cellar done in collaboration with Where The Wild Beers Are. Dark fruit, mild Brett. funk, slight roast, warming alcohol, moderate acidity.

LÄCTOBÄC: 13

4.5% ABV, 20 IBU, 10 GRAVITY

The thirteenth installment of the LÄCTOBÄC series is likely the hoppiest one yet. A simple saison base hopped and dry-hopped with Crystal hops, #13 is citrusy, juicy, tropical, and tart.

LÄCTOBÄC: THREE

5.3% ABV, 19 IBU, 12.1 GRAVITY

Our third soured beer, LÄCTOBÄC 3 is a sour stout. Made with the finest English malts, lactobacillus, American hops, and French Saison yeast. It's dark, tart, and fruity.

LÄCTOBÄC: FOUR

5% ABV, 23 IBU, 12.7 GRAVITY

LÄCTOBÄC: FOUR is a combination of sour beer and American pale ale. Kettle and dry-hopped with a new and interesting hop variety called Equinox.

TUQUE

7% ABV, 30 IBU, 15 GRAVITY

Named after the Canadian winter hat, Tuque is a non-traditional farmhouse ale, brewed and "dry-hopped" with juniper berries. An interesting spicy, fruity, and mildly malty winter beer.

LÄCTOBÄC: 11

5.7% ABV, 15 IBU, 11.8 GRAVITY

LÄCTOBÄC 11 is a kettle-soured brown ale to which we added persimmon purée and a hint of tart cherry. Fruity, tart, dry, and malty. pH 3.4

LÄCTOBÄC: TWELVE

4% ABV, 10 IBU, 10.5 GRAVITY

The 12th installment of the LÄCTOBÄC series is a sour wheat brewed with fresh lemon juice, lemongrass, and ginger added. Spicy, fresh, tart, and herbal. pH 3.20. We suggest drinking outside.

LÄCTOBÄC: FIVE

4% ABV, 10 IBU, 10.5 GRAVITY

LÄCTOBÄC five is our play on a Berliner Weiss - it's 50% wheat, produced in the same manner as a Hefeweizen, and fermented with Bavarian wheat yeast. 4.0% ABV, 3.25 pH.

LÄCTOBÄC: NINE

5% ABV, 12 IBU, 10.7 GRAVITY

The last single digit LÄCTOBÄC of the series, NINE is a pale sour wheat finished with grapefruit and Citra hops. Number nine... number nine...

BRICOLEUR #2 BOTTLES

4.9% ABV, 30 IBU, 10.5 GRAVITY

Mixed culture sour that is a blend of stainless fermented & barrel-aged beers. The base recipe is a riff on our Pils: a funky combination of grassy Noble hops and "wild" yeast character.

LÄCTOBÄC: SIX

4% ABV, 10 IBU, 10.5 GRAVITY

LÄCTOBÄC 6 is our interpretation of a Lichtenhainer, a mostly dead style of sour wheat beer from Central Europe. Brewed with Oak-smoked wheat malt and Beechwood-smoked barley malt, and soured by lactobacillus. pH 3.28.

LÄCTOBÄC: SEVEN

4.3% ABV, 10 IBU, 10.6 GRAVITY

The seventh installment of the LÄCTOBÄC series is, well, purple. Very purple. A sour wheat with over 200lbs of blackberries added. 4.3% ABV, 10 IBU, pH 3.35

The tenth installment of the LÄCTOBÄC series, this time with blood orange, cranberry, and ginger added. Holiday beer without cinnamon!

LÄCTOBÄC: EIGHT

4.8% ABV, 10 IBU, 11.6 GRAVITY

Our latest LÄCTOBÄC, eight is a salted watermelon Gose. Pale in color, dry and tart. Noticeable watermelon character rounded out with a touch of salt and tart lactic acidity.

RED VIPER

STOUT

An American stout featuring oats and a hefty dose of brown malt, a traditional lightly roasted malt that gives a smooth and complex roasted flavor without the acrid character of a true black malt.

HOPLAGER

5.3% ABV, 38 IBU, 12.3 GRAVITY

An American-hopped, dry-hopped, pale lager. Hopped and dry-hopped with local Mighty Axe Cascade and Crystal hops. Intense hop aroma, crisp lager everything else. It's FUSION!

MEMBER DESIGN 1

8.1% ABV, 22 IBU, 17 GRAVITY

A group of members sat down with Niko to conceive of this pale, Belgian-style ale brewed with citrus zest, a bit of peach purée, and the slightest hint of ginger.

FESTBIER

5.7% ABV, 20 IBU, 13.2 GRAVITY

Our version of the traditional Oktoberfest Märzen lager. Brewed with Vienna and Munich malts for a toasty, bready character. Crisp and easy to drink liters of.

OLD RICHMOND RYE

7.3% ABV, 40 IBU, 16.5 GRAVITY

Our first collaboration with 45th Parallel Distilling, Old Richmond Rye is a rye old ale aged in New Richmond Rye whiskey barrels for 3 months. Oodles of whiskey and oak character.

HORATIO

4% ABV, 35 IBU, GRAVITY

Brewed in collaboration with our friends over at Fulton, Horatio is a pale sour wheat made with rhubarb.

WILD ROVER

6.8% ABV, 20 IBU, 13.8 GRAVITY

This barrel-aged mixed culture stout sat in oak for 12 months, and was then re-fermented with raspberries. Berries, toasty oak, rich dark malt, sour and funky throughout.

SESSION IPA

4.8% ABV, 45 IBU, 11 GRAVITY

Jump right into this 4.8% ABV, 45 IBU india pale ale built upon Simcoe, El Dorado, Mosaic, and Citra Hops. Aromas of pine, citrus, and tropical fruits. Crazy crushable!

IPA: CHINOOK/EL DORADO

6% ABV, 75 IBU, 13.9 GRAVITY

IPA is back. From now on, we're varying the hop profile from time to time, for fun. This batch is Chinook, El Dorado, and Citra. Hazy, dank, tropical, & dry with a bracing bitterness.

ROBERTINE

5.4% ABV, 40 IBU, 12.4 GRAVITY

Bright, dry, crisp, and hoppy, this is our first American pale ale. Hopped and dry-hopped with Cascade and Centennial, and named after our favorite 96-year old Iowan.

LIMOO

6.3% ABV, 23 IBU, 12.8 GRAVITY

A blend of 16- and 6-month-old barrel-fermented mixed culture sour beers infused with Omani dried black limes. Oaky, dry, distinctly sour and funky, with a complex background of fermented citrus.

DAKOTA SKIPPER

5.7% ABV, 30 IBU, 11.8 GRAVITY

A saison made in partnership with the MN Zoo to raise awareness about the plummeting populations of local butterflies. Part of all proceeds go to benefit the Zoo's conservation efforts.

KELLER KAZBEK

4.9% ABV, 38 IBU, 11.9 GRAVITY

An update to our normal pils, this version is brewed exclusively with Kazbek hops. Unfiltered for the purest pilsner experience.

INFUSED DAKOTA SKIPPER

5.7% ABV, 30 IBU, 11.8 GRAVITY

A saison brewed with native prairie grasses, produced in partnership with the Minnesota Zoo to help raise awareness about the plummeting populations of Minnesota butterflies. A portion of all proceeds go to benefit the Zoo's conservation efforts.

PARADISIAC

6.1% ABV, 22 IBU, 12.5 GRAVITY

A blend of two different barrel-fermented mixed culture beers with grapefruit (Citrus paradisi) puree, and fresh (hand squeezed, just ask us about it) lemon and orange juice. Bright, funky, and sour.

BROWN ALE

5.1% ABV, 35 IBU, 12.7 GRAVITY

You've been wanting something brown, and we'd hate to disappoint, so here 'tis! An American-style brown ale, brewed with oats, and hopped with Horizon. Sessionable and malty, all at once.

BRICOLEUR #2

4.9% ABV, 30 IBU, 10.5 GRAVITY

Mixed culture sour that is a blend of stainless fermented and barrel-aged beers. The base recipe is a riff on our Pils: a funky combination of grassy Noble hops and "wild" yeast character.

SHOULDER OF ORION

5% ABV, 35 IBU, 11.6 GRAVITY

Brewed in collaboration with Modern Times Beer, we present to you a dry-hopped pale lager. Featuring a little haze yet still crisp with a juicy hop flavor to accompany the bitterness.

RYE FALUTIN

7.6% ABV, 26 IBU, 15.1 GRAVITY

A 12 month barrel-aged mixed culture rye saison re-fermented with locally-grown white wine grapes. Oaky and sour with strong Brett and vinous character—it's real highfalutin stuff.

PAHLAY'AHLAY

4.8% ABV, 45 IBU, 11.3 GRAVITY

A pale ale hopped & dry-hopped with Citra creating a, like, tropical fruit explosion, man. Mango, pineapple, lemon lime. Citra self down and enjoy a few pours of this crushable hoppiness.

PALE SMOKE LAGER

4.8% ABV, 25 IBU, 11.8 GRAVITY

Brewed in the traditional Bamberg style, this is a pale helles lager brewed with malt smoked over beechwood. Light and crisp with a subtle smokiness that adds a layer of complexity.

CROMULENCE

4% ABV, 10 IBU, 10.5 GRAVITY

Modeled on the classic Berliner Weisse, Cromulence is a low-ABV sour wheat beer to which we add fresh citrus. Tart, refreshing, and bready.

DOUBLE POMP $6

9.2% ABV, 80 IBU, 17.9 GRAVITY

A double-ized version of Pomp Le Moose, brewed with Simcoe, Amarillo, and El Dorado hops. Extra dry, extra pale, extra boozy.

NORTH/SOUTH IPA

5.9% ABV, 60 IBU, 13.5 GRAVITY

Our first beer made exclusively with MN malt, grown & malted by Vertical Malt in Fisher, MN. We used S. African "Southern Passion" hops to provide juicy, tropical, peachy hop flavor/aroma.

ARTSY FARTSY

5.1% ABV, 30 IBU, 11.8 GRAVITY

An Art-A-Whirl exclusive, Artsy Fartsy is a Simcoe/Cascade pale ale. Dry and hop forward, this is the perfect beer for drinking while perusing art in all its various forms. Farts optional.

CITRA SOUR

5.7% ABV, 25 IBU, 11.7 GRAVITY

This is a 100% barrel-fermented and aged, mixed culture "pale ale," hopped (and dry-hopped) exclusively with Citra. Sour, funky, fresh and intensely hoppy. Tropical, funky, fruity.

IPA: CITRA/MOSAIC

6.4% ABV, 60 IBU, 14.5 GRAVITY

IPA is back. From now on, we're varying the hop profile from time to time, for fun. This batch is Citra and Mosaic. Fruity, tropical, and dank. Made with the cool kid hops.

MEMBER DESIGN #2

Our second member-designed beer is a Baltic porter, traditionally cold fermented with lager yeast, brewed with beechwood smoked malt, WI maple syrup, and a hint of black pepper.

POMP LE MOOSE

6% ABV, 48 IBU, 12.5 GRAVITY

A dry, pale, hoppy Farmhouse IPA brewed and dry-hopped with Centennial and Meridian hops for a spicy, citrus-forward hop and yeast party.

FRESH HOP DU POUNDE

5.2% ABV, 25 IBU, 11.3 GRAVITY

Our saison brewed with 100 pounds of fresh Crystal hops grown by Mighty Axe Hops in Ham Lake, MN. Dry, rustic, grassy, and fruity.

POMP FAKE

4.8% ABV, 25 IBU, 9.9 GRAVITY

A Grisette is the dry, low alcohol, assertively hopped cousin of the saison, brewed with wheat. Fermented sans temperature control with our saison yeast, and hopped with American hops.

BAUHAUS COLLAB HELLES

4.8% ABV, 18 IBU, 11.5 GRAVITY

We brewed this beer with Das Homeguys at Bauhaus Brew Labs. It is a no foolin' Helles Lager Bier. In Germany, you would drink lots of this outside in a beer garden. We suggest doing the exact same thing here.
