This is a Strawberry Mojito–inspired take on Roselle, our favorite hibiscus sour. Basically what we did here was brew up a batch of Roselle like normal, and then added over a pound per gallon of strawberry purée and some house-made mint syrup. The resulting beer is essentially summer in a glass. Bright, fruit-forward, balanced acidity, and a hint of cooling mint. It’s our Zippy Little Pink Beer, in patio cocktail form.
