Kvass-style ale brewed in collaboration with Fonta Flora Brewery, using pretzels and bread from our neighbors at Aki's Breadhaus, as well as Pilsner and Beechwood-smoked barley malts. In essence a farmhouse table beer, BOWSAW is dry, spritzy, a touch acidic, and has hints of smoke and minerality.

Mixed Fermentation Saison

It's 1,170 miles (give or take) on I-35 from Minneapolis to Austin. This stretch of road plays a central role in the genesis of Fair State, and the name of this beer is a nod to the importance of personal histories, even for relatively young companies like us. Brewed using MN malted barley, wheat, and flaked oats, spruce tips foraged from MN, and rosemary collected from the Jester King property to infuse this beer with a sense of place and purpose.

Wet Hopped Table Saison

Brewed in collaboration with our esteemed colleagues at Wild Mind, Chateau Estate Reserve 2018 is brewed with 10lbs per barrel of freshly harvested, MN-grown Centennial hops from Mighty Axe. It is inspired by the sort of beverage we imagine farmhands in rustic continental settings would drink out of fancy stemware after a bucolic day harvesting grapes one at a time, illuminated only by the softest orange light of a perpetually setting sun. Y'know, some real fancy stuff like that.
